I now have a few Halloweens on keto under my belt. Sitting on the couch with the candy bowl waiting for trick-or-treaters, it’s most definitely tempting to snack on the treats. However, I know all too well how I will feel after sugary candy and it’s not good for me or anyone around me.
At about 7.5g net carbs, this quick keto dessert hits the spot. The pumpkin cake is filling, sweet, and does not send my blood sugar on a roller coaster ride. This mug cake is now on my list of the best keto Halloween treats.
Halloween Mug Cake Ingredients

- Almond flour
- Coconut flour
- Erythritol
- Baking powder
- Pumpkin pie spice
- Melted butter
- Pumpkin purée: Get 100% pure pumpkin
- Egg
- Shredded coconut
- Food coloring
Halloween Pumpkin Spice Mug Cake Directions
In a microwave-safe mug, mix the almond flour, coconut flour, baking powder, erythritol, and pumpkin pie spice until well incorporated.
Add the melted butter, egg, and pumpkin purée. Stir until smooth.
Cook in the microwave for 90 seconds or until the top is opaque and cooked through.
Divide the shredded coconut into 3 small bowls and use food coloring to color it to the desired shades.

Pumpkin cake might take longer in the microwave.
Since pumpkin is so moist and dense, it may take a bit longer in the microwave. After testing this pumpkin cake a few times, twice it took 1 minutes and 30 seconds and once it took 1 minutes and 45 seconds. Be sure to check yours with a toothpick before digging in.
Can I substitute the flour?
Mug cakes are usually pretty forgiving and easy to swap flours. With this particular mug cake, that’s not really the case. Please know that results may vary if you use different flour than listed.
Do I have to use the coconut shreds?
The colored coconut shreds are optional. They are mainly there to provide Halloween vibes. Only 1 Tablespoon is used in this recipe, but feel free to add more to the cake mix if you like the flavor and texture of coconut shreds.

- Cook in the microwave for one minute and thirty seconds or until the top is opaque and cooked through.
- Divide the shredded coconut into 3 small bowls and use food coloring to color it to the desired shade.
