What’s better than a morning cup of coffee? Well, a low-carb coffee cake in a mug right next to it. This coffee mug cake is a real treat if you are on a low-carb diet.

Keto Coffee Cake in a Mug Ingredients

Mug Cake

  • Almond flour
  • Coconut flour
  • Brown sugar Swerve
  • Cinnamon
  • Baking powder
  • Melted butter
  • Non-dairy milk
  • Egg
  • Vanilla extract

Crumbled Topping

  • Brown sugar Swerve
  • Softened butter

Glaze

  • Powdered erythritol
  • Water or low-carb milk

Low-carb Coffee Mug Cake Directions

In a microwave-safe mug, mix the almond flour, coconut flour, brown sugar, cinnamon, and baking powder until well incorporated.

Add the melted butter, low-carb milk, egg, and vanilla extract. Stir until smooth. Do not over mix.

No, for this coffee cake it’s important to use a brown sugar alternative to get the full coffee cake flavor.

Do not let the batter sit for too long. Coconut flour absorbs moisture as it sits and will keep doing so the longer you leave it.

Brown Sugar Swerve is a bit sticky and hard to mix, but the results are so very worth it. Take a little extra time to mix thoroughly incorporating the brown sugar with the rest of the ingredients.

  • 3 Tablespoons non-dairy milk
  • 1 egg, beaten
  • 1 teaspoon vanilla extract

Crumbled Topping

  • 1 Tablespoon brown sugar Swerve
  • 1 teaspoon softened butter

Glaze

  • 1 Tablespoon powdered erythritol
  • 1 1/2 teaspoons water or low-carb milk

Instructions

  1. In an 8 ounce, microwave-safe mug, mix the almond flour, coconut flour, brown sugar Swerve, cinnamon, and baking powder until well incorporated.
  2. Add the melted butter, milk, egg, and vanilla. Stir until smooth.
  3. Make the crumble topping by using a fork to combine 1 Tablespoon brown sugar Swerve with softened butter. Crumble on top of mug cake.
  4. Cook in the microwave for one minute and thirty seconds or until the top is opaque and cooked through.
  5. Meanwhile, make the glaze by combining powdered erythritol with water or milk. Drizzle on top of finished mug cake and serve.
